Fresh Peach Coffee Cake

This year I was lucky enough to actually get a few peaches off my peach tree before the bears got them. They aren’t the best kind of peaches, clingstones without a lot of peach flesh, but what can one expect from a wild peach? Still, that fresh peach flavor is wonderful and tastes of summer. There were enough to make DH a coffee cake, something he really likes for breakfast.

Isn’t that little writing board cute? It is ceramic, and I got it at Pier One. I was teasing the checkout girl that Pier One should pay me for all the stuff I get there that ends up on the blog. They don’t, but it would be nice. Anyway, back to the peach coffee cake, it turned out wonderful with chunks of peach with the cinnamon and oat topping.

I made some adjustments to the basic sour cream coffee cake recipe to allow for the extra moisture in the peaches. Start by peeling and chopping the peaches, and sprinkle with some sugar. Set aside.

In a small bowl, combine brown sugar, 3 tblsp butter, oats and cinnamon and set aside.

Grease and flour a tube (or Bundt) pan, set aside. Combine flour, baking powder, baking soda and salt in a bowl and set aside.

Beat 3/4 cup butter with white sugar until well blended. Add eggs one at a time beating well after each addition.

Stir in 1/3 of the flour mixture and mix well on low speed, followed by 1/2 of the sour cream. Repeat. Add last of flour mixture and mix well. Fold in fresh peaches. Dollop 1/3 of the batter into prepared tube pan, spread evenly.

Top with 1/3 of the streusel topping.

Repeat two more times.

Bake 50-55 minutes at 350 degrees until lightly browned. Cool 10 minutes in pan.

Remove outer pan and allow to cool another 10 minutes. Don’t try to take it off the tube too quickly or it will break apart.

Remove to a wire rack. Serve warm or cooled.

Fresh Peach Coffee Cake

3/4 cup packed brown sugar
1/4 cup quick oats
3 tablespoons butter
1 tablespoon cinnamon
1 cup fresh peaches, chopped (about 8-9 clingstones, or 3-4 large freestones)
1 tbsp sugar

3 cups all purpose flour
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
3/4 teaspoon salt
1-1/2 cups granulated white sugar
3/4 cup unsalted butter, softened
3 eggs
1 tsp vanilla
3/4 cup sour cream

Preheat oven to 350 degrees. In a small bowl, peel and coarsely chop fresh peaches, sprinkle with 1 tbsp sugar, set aside.  In another small bowl, combine brown sugar, 3 tblsp butter, oats and cinnamon and set aside. Repeat two more times. Bake 50-55 minutes at 350 degrees until lightly browned. Cool 10 minutes, remove outer pan and allow to cool another 10 minutes. Remove to a wire rack. Serve warm or cool completely.

  7. I’ve never tried baking with peaches other than in cobbler. This one looks like a good one to try!
